A healthy swap perfect to enjoy while watching sport on TV or just for the family dinner!
1 red onion, finely diced
1 tomato, finely diced
2 tbsp organic coriander powder (or fresh leaves finely chopped)
1/2 tsp organic cayenne pepper
1 tbsp organic paprika (smoked, sweet or plain, depending on your preference)
Healthy fat to cook in (grass-fed beef tallow, lard, coconut oil, ghee etc)
1 tbsp bone broth
3/4 cup organic tomato paste
Pink salt, black pepper to taste
250g grass-fed beef mince
2 cups golden sweet potato, cut into relatively even thin or thick 'fries' (use a slicing gadget with a suitable blade)
2 tbsp arrowroot powder
A splash of organic olive oil (or other healthy cooking oil)
We use the sheep cheese wedges from Aldi because it melts really well, but you can use whatever cheese you like
1. Pre-heat the oven to 180 degrees Celsius and line an oven tray with baking paper
2. Use paper towel to gently dab the sweet potato slices to remove excess moisture
3. In a plastic bag add the sliced sweet potato, arrowroot and salt then shake gently until the arrowroot seems to be evenly covering the sweet potato
4. Spread the olive oil out over the sheet of baking paper on the oven tray then spread the sweet potato slices across ensuring they all get some oil on them
5. Place the tray in the oven and bake for 10 mins, check on the fries and move any around that are starting to brown, swapping places with those that need more browning, pop back in the oven for another 5-10mins until all slices have some brown and appear to be cooked well and crispy on the outsides.
Note that they will stick together if touching because arrowroot is sticky when cooked. This is fine, just gently pull apart as needed.
6. Once cooked, remove from the oven and allow to cool. Serve onto plates or in bowls ready for the sauce to go on top.
1. Heat oil in a saucepan at a moderate temp then add the onion and mince. Break up the mince with a wooden spoon, increase the heat if needed to get the mince slightly brown
2. Add the remaining ingredients and stir to combine and heat through
3. Spoon over the fries, sprinkle on grated cheese of choice, then place plates or bowls in the oven for a minute just to melt the cheese and allow it to brown slightly before serving
If you made thin fries they may be tricky to use to transfer sauce on to your mouth, so you may need a fork. But if you made thicker fries you should be able to use your fingers. That's way more fun of course!
