Easy Healthy Chocolate Recipe - two versions to choose from!
Version #1: Ghee only - for those who like it rich
Ingredients: (fills a silicon mold with 15 places)
3 tbsp organic cocoa (Organic Times is our fave - so good!)
1/4 cup grass-fed ghee, soft enough to stir, not solid
Stevia powder or liquid to taste OR a bit of raw honey
Kitchen Gadgets:
Whisk or spoon
Small mixing bowl
1 x silicon molds with 15 small places (e.g. heart-shape, oval etc)
Silicon spatula
Measuring spoon and cup
Firm tray or board
Method:
1. Place all ingredients in the mixing bowl and stir well until no cocoa lumps remain
2. Use a teaspoon or pour mixture straight from the bowl into the moulds that are placed on a tray or board
3. Use the spatula to spread any drops into the mould spaces
4. Transfer the tray or board to the fridge or freezer (freezer is quicker for setting but the fridge works fine) for a couple of hours until firm
5. Remove the chocolates from the mould and store in a container with a lid, either in the fridge or freezer - frozen chocs are a bit harder to bite into so the fridge would be best for kids' teeth
Version #2: Ghee + coconut combo - for those who like a bit of coconut flavour without it being too strong
Ingredients: (fills a silicon mold with 15 places)
3 tbsp organic cocoa (Organic Times is our fave - so good!)
1/4 cup grass-fed ghee AND liquid raw coconut oil combined
Stevia powder or liquid to taste OR a bit of raw honey
The method is the same as the ghee-only version.
Optional extra: add organic clean peppermint essence or vanilla for a yummy and healthy flavour boost!
Free from: Gluten / Grains / Dairy / Refined sugars / Soy / Legumes / Eggs / Nuts / Seeds / Flour
I created this during a 21-day Primal Reset while excluding sugar including honey. White stevia powder works well for adding sweetness.
